Department of Liquor Brewing Engineering
The Department of Liquor Brewing Engineering (the Department) is the key construction department of MTI. The Department has 62 teaching staff in total, including the full-time and part-time teachers. Among them, 40% have doctor’s degree, and 38% have senior title, which formed a reasonable faculty in terms of the title, age and academic structure. Currently, there are 1,024 students majoring in such three majors as Baijiu Brewing Engineering, Liquor Brewing Engineering and Grape and Wine Brewing Engineering. In particular, in 2019 the Liquor Brewing Engineering was listed as the first-class discipline construction of Guizhou Province. The Department, based on the liquor brewing industry and Moutai Group, adopts the mode of “production & education integration” to cultivate innovative and applied talents with the abilities of liquor brewing, koji making, liquor testing, liquor tasting and liquor body design. Besides, the Department has established a joint cultivation mechanism with Jiangnan University and others. At present, it has set up many laboratories for alcoholic beverages production (baijiu, beer and wine production lines), analysis and inspection, and tasting (baijiu and wine), etc. It has also set up practice and training bases in Moutai Group and many other major liquor-making enterprises in both Guizhou province and others. In recent three years, taking on the momentum of being granted key supporting subject and laboratory for liquor brewing engineering by the Department of Education of Guizhou Province, our students have won over 100 honors and prizes at or above the provincial level, such as national scholarship, national encouragement scholarship, provincial outstanding students, and merit students. Besides, we have 5 students won prizes in the National Liquor Tasting Competition. Our teachers have been approved 5 provincial and ministerial level projects, 2 provincial teaching reform projects, and more than 20 municipal level projects.

    - We aim to cultivate quality and applied talents with broad knowledge and multi-field adaptability, who should be equipped with the following features: first, an all-round development of morality, intelligence, physique and aesthetics; second, having basic ability of second language and basic computer application; third, mastering basic knowledge of chemistry, biology, microbiology, engineering and management; fourth, systematically mastering basic theory of brewing engineering and professional skills; fifth, being capable of making scientific research, product R&D, engineering design, production management, quality control, product marketing, culture promotion, inspection and quarantine, education and teaching in the departments such as liquor production and processing, distribution and the related education, research, import and export trade, supervision and inspection, and safety management;
